A twist to the usual mashed potatoes is by adding caramelized onions. It sounds fancy, but trust me it’s very simple and so easy to make.
Boil the potatoes, as usual.
On a non-stick pan, medium heat, melt a stick of butter with sliced onions. Use a regular yellow onion or Vidalia. I used the latter since I had leftovers from the tossed salad nights ago. That’s all you need to caramelize onions. Butter and onions. Cook the onions until brown. Add more butter if needed.
Once the potatoes are done, totally soft and all, drain the water. Add the caramelized onions onto the potatoes, with the melted butter. Season with salt and pepper. Add more butter if you want to. Technically, you’ll already have butter with the onions but a little bit more wouldn’t hurt
. Add a little bit of milk. About 1/8 of a cup or so. Just pour a little bit, really. that’s all you need. Don’t add too much milk coz the end result after mashing is pasty.
Mash the potatoes and onions together.
Perfect side dish for Thanksgiving or Christmas dinners. Or anytime
