Devil's Food Cupcakes W/ Buttercream & Chocolate Frostings

Summer vacation means baking cookies and cupcakes.  Even though it’s like 100° outside. Kids want to do something in the kitchen. Buying a new cupcake book certainly added to the appetite for something sweet. I made the Devil’s Food Cupcakes. Using 2 different frostings. Even though the cookbook only used chocolate frosting, this is my kitchen and kids, and yes Mommy and Daddy too, were talking about. If we’re going to make cupcakes, we better make sure there is  enough for everyone and options. They are miniature cakes after all. :)

Devil’s Food Cupcakes : To make 2 different batches, you need to double the ingredients.

3 1/2 tbsp soft margarine
1/2 cup firmly packed brown sugar
2 large eggs
3/4 cups flour
1/2 tsp baking soda
1/4 cup unsweetened cocoa
1/2 cup sour cream

Preheat the oven to 350°F. Put paper baking cases in a 12-muffin pan.

Put the margarine, sugar, eggs, flour, baking soda and cocoa in a mixer bowl. Beat together until just smooth. Using a metal spoon, fold in the sour cream. Spoon the batter into the paper cups.

Bake the cupcakes in the oven for 20 minutes or until well risen and firm to touch. Transfer to a wire rack to cool.

CHOCOLATE FROSTING

6 tbsp butter or margarine
1 cup confectionary sugar
1 tbsp cocoa powder
1/2 tsp vanilla extract

Beat together in mixing bowl into a smooth spreadable consistency.

BUTTERCREAM FROSTING

6 tbsp butter or margarine
1 1/2 cup confectionary sugar
1/2 tsp vanilla extract

Beat together in a mixing bowl into a smooth spreadable consistency.

The frosting recipes are the basic ways in making frosting. There’s really nothing to them. As you can see from the ingredients list, you don’t need that much.

I said in the beginning that cupcakes are cook during summer vacation but seriously, Moms make cupcakes during school time too. For birthdays and other occasions :) .

  1. I’ve had my Chocolate Touch since it came out. I utilised to have a Razr. I’ve been looking around at the filesystem on Bitpim and just began putting flash wallpapers on it. I’ve also checked to see how EnV Touch themes look on it. I’d like to commence trying to make themes and wallpapers in Adobe Flash CS4. But I just started out, so it’ll likely be awhile just before I get anything. Tongue

    Thank you very much for sharing your experience. I bought the recipe book “CUPCAKES” in London some years ago. I tried to cook this Devil cupcakes yesterday but I failed, they were tasteful but not goodlooking. My mistake: I open the oven very early… and they went down.
    I wondered if the recipe is correct, but seen your result, I have realized that I have to try again.
