LaPiS #6 : Creamy : Chicken Fettuccini Alfredo

chicken-fettuccini-alfredo-lapis-creamy-1

This week’s LaPiS theme is CREAMY. I made this chicken fettuccini alfredo dish a few nights ago but I thought I’d wait to post it for this Sunday’s theme. Talk about Creamy goodness full of carbohydrates…LOL. Hey, there’s protein in the chicken, right? :)

Step by step process will be posted tomorrow or sometime next week. I’m tired and I just want to lay down in the couch, flip on the September issue of VOGUE while I watch Iron Chef America. It’s salmon dishes between Bobby Flay and Check Boucher. CIAO!

In the meantime, check out all the creamy entries at LaPiS.

Pork Dumplings, Step By Step & Better Pictures

 pork-mushrooms-dumplings-11

I’ve already posted a pork dumpling recipe here a few months ago but I figured with my new Nikon D40, I’d take better pictures while I made it the 3rd time and then show you the step by step process. Actually, I asked my husband to take pictures of me making it since both my hands were very busy.

Trust me, once you see the step by step pictures, you’ll realize that it’s not that hard to make pork dumplings. Not at all. It’s easy that you’ll be making ‘em every week. The family loves it. My son can’t stop talking about it. My husband talks about how good dinner was while we’re in bed getting ready to sleep. It’s that GOOD :) .

Spicy Apricot Glazed Pork Loin Chops

spicy-apricot-glazed-pork-loin-chops-6

In the September issue of Martha Stewart’s Everyday Food magazine, there’s a recipe for spicy apricot glazed chicken boneless breast. I didn’t want to eat chicken but I wanted to make it so I decided to use pork chops instead. Yes, it’s perfectly fine to change the meat whenever you feel like it. There’s no law against it at all. :)

LaPiS # 5 : Breakfast | 1st Day Of School

breakfast-plate-lapis

The new theme for LaPiS is Breakfast. I wasn’t able to participate in the 2 previous ones coz either I couldn’t think of a picture or I just didn’t have time. The past 2 weeks have been too busy for me. Well, today is the first day of school. I don’t usually cook breakfast during the week (cereals, anyone?). Weekends is when the whole family all sit down in the dining table and enjoy our traditional full plate of breakfast that Mommy (that’s me) prepares. We go all out during the weekends with eggs (sunny side up or scrambled), bacon/sausage, ‘taters or toast. Sometimes we have pancakes. I get creative by adding either chocolate chips, blueberries or strawberries. That’s a family tradition in out house.

But, today is the 1st day of School. My son is embarking on 5th grade. I figured it wouldn’t hurt to act like the Best Mommy in the World by cooking him our traditional weekend breakfast. Eggs, Beef Bacon and Wheat toast w/ butter. Hmmm, beef bacon? Yup, my husband saw it at the commissary and thought we’d try it. After cooking a few strips this morning I told Hubs if he ever thinks about buying it again, I’ll kick his behind. The beef bacon is just not pork bacon. Well duhhh??. Pork bacon can get crispy, not the beef. It’s like salty thin strips of smoked beef. I don’t like it. I want my REAL bacon back.

Anyhooo, Happy First Day Of School!!

Chicken Wings Fried Rice

chicken-wings-fried-rice-005

Since work server was being wonky I decided I’d make lunch for me and the kids. Well we do eat lunch, but mostly it’s either canned ravioli, dinner leftovers, cold cuts sandwiches, nuggets, P&B sandwiches or hotdogs. Yah know, easy stuff. Today, I figured I’d make us something nice and errrr, homemade that wasn’t from last night’s dinner. I gave Hubs the leftover chicken enchiladas (recipe will be posted later) for his own  at work.

I came up with this chicken wings fried rice. The last time I went grocery shopping, the commissary ran out of fresh chicken wings so I just bought a bag of frozen wings. We need ‘em for our weekly hot chicken wings. It’s a huge bag so there’s plenty to make hot chicken wings for 3 weeks. I’m sure 10 pieces of wings missing wouldn’t hurt the next batch of hot wings next week :) .

Grilled Mojito Marinated Flank Steak

I have a few more bottles of Captain Morgan’s Mojito drink so I thought I’d use a cup from one bottle to marinate a flank steak. Alcohol induced meat, grilled to perfection afterwards is delish :) .

You don’t need much for the marinade. This is a simple dish perfect for grilling.

It's Papaya Day

papaya-july08

I saw this ripe papaya at the commissary and since  my kids have never  tried papayas I figured it’s now or never.  They weren’t too sweet but they weren’t bland either. and not too ripe either. Just a perfect balance.

Of course I discarded the seeds. They look really pretty though. I could’ve saved them for a garden but we’re moving in 6 months (cross fingers) so there’s no point starting one.

Anyhooo… do you like papaya too?

Pork Adobo

feistycook-pork-adobo-1

I’ve cooked, and posted pork adobo, in many ways and many many times but since I keep moving servers, changing domains and lazy to save archives, here is another post of my favorite Filipino dish, Pork Adobo.

I’m just going to repost the chicken adobo recipe after the jump since I cook it the same way anyway. I just change the meat. Unless I’m using a crockpot to turn pork ribs to the most flavorful pork adobo ever. That’s another post sometime.

Whole Grain Penne W/ Italian Sausage In Mushroom Sauce & Cheese

italian-sausage-mushroom-saucet-penne-feistycook0

When my husband picked up the Italian Sausage link the last time we went grocery shopping, he was looking forward to eating them with spaghetti. Just like the way his Mother makes. With the tomato base sauce. That was my plan too until I realized the day I started assembling the dish that I ran out of spaghetti sauce. I thought I had another can of Del Monte but I thought wrong. After gathering my thoughts a bit, I decided to rummage my pantry for ingredients that would compliment the sausage. All I know is that I had to make a pasta dish.

I found a can of cream of mushroom soup, a box of whole grain penne (among the reserved pasta boxes) and of course two of the fridge’s staples, shredded cheddar cheese from the deli compartment and milk.
