ASPARAGUS W/ TOASTED GARLIC AND CRISPY BACON
Who doesn’t love Asparagus? How about Bacon? Combine the two with toasted garlic and it’s an infusion of a good vegetable side dish. This is very easy and quick to do.
Slice the bacon into small pieces. Brown in a non stick pan until crunchy. Put the browned bacon on a plate and set aside. On the same pan toast the finely chopped 2 or 3 cloves of garlic. Don’t burn it. Once toasted, set it aside along with the browned bacon.
Using the same pan, pour about 2 tbsp of water, add the asparagus and let it sauté/steam for a few minutes. Not too long coz you want to retain the asparagus freshness, crunchiness and color. Season with salt and pepper. Turn the stove off and stir in the toasted garlic and bacon.
Perfect veggie side to accompany either chicken, pork chops or steak.
FOOTLONG SUB FROM WALMART FOODCOURT
We couldn’t figure out what to have for lunch one weekend ago so we decided to try for the second time, Wal-Mart’s Footlong Sub sandwich. This thing is huge and filled with deli goodies. Turkey, Ham and Roast Beef accompanied with lettuce, swiss cheese, colby jack cheese and American cheese. If there are no recalls on tomatoes these days, the latter would be on the sandwich too. It’s wrapped and you get to add your condiments of choice from your home before indulging. As big and thick as it is, after taxes it’s only about $6. I actually just ate half of that.
LaPiS #2 : DRINKS | MANGO MARGARITA
On weekend nights, I try to indulge with a couple of beers, or a bottle of wine, or cocktails with the hubby. This round of LaPiS (Lasang Pinoy, Sundays), we are indulging on drinks. For my share, here’s 2 glasses of Mango Margarita.
A cocktail that’s easy to make. With the help of Margaritaville Mango Margarita Mix, Tequila (Jose Cuervo) and ice cubes. I used my Magic Bullet Platinum Pro Blender with the cross blade to pulverize/crush the ice cubes, then blended in the mango margarita mix and tequila. The measurements can be found on the back of the margarita mix bottle.
COCONUT MACAROONS
I got the recipe of these coconut macaroons from the back of the coconut flakes package. I’ve been craving it for sometime now but just haven’t had the time until a few nights ago. I’m especially loving my new Kitchen Aid for making all the baking fun and and delicious.
It was my first time making coconut macaroons so of course my first batch was burnt at the bottom. So the top was sweet, the bottom on the other hand was bitter. Still good but yah know, I made sure the rest of the batches were perfect
.

ANOTHER CUPCAKES BOOK
The truth is, I really don’t need another cookbook, let alone a cupcakes cookbook since making cupcakes is not rocket science. to me anyway. But I saw how beautiful this Cupcakes recipe book from Books-A-Million last weekend and I just could not resist. The cover made me drool. If I could’ve licked those frosting off of the cover, I would have. Well, I’m sure I’ll learn new cupcake recipes and frosting tips from it. I know my son has been bugging me for a “cupcake date” in the kitchen when he saw the book.

Whenever I’d wake up on the weekends, flipped channels on the Telly coz I’d want to continue savor a quiet moment in bed, an infomercial of Magic Bullet comes on. Then I’d fantasize about making all the stuff they’re making with my own Magic Bullet. Salsa, fruit drinks, margaritas, dips, etc, and right in the nick of time. But alas I didn’t have one.
