
We love our hot chicken wings night. My wings are better than any pizza place’s wings. As I’ve been told many many times, by my husband. He’s pretty much the only one who likes HOT spicy wings as much as I do..
INGREDIENTS :
2 packs of chicken wings
flour for drenching (about 2 cups)
salt and pepper
vegetable oil for deep frying
SAUCE :
Texas Pete Hot Sauce
2 tbsp of butter
2 packs of chicken wings usually comes with 6 full wings each. Separate the wings from the little drumsticks. Sorry, don’t know what they’re called. You know how wings look like right? Throw away the tips. From that 6 full wings, you’ll have 12 wings. With 2 packs, you’ll have 24 wings.
Put oil in a deep frying pot or pan. Use medium heat.
Combine flour, salt and pepper. Drench the chicken wings in the flour mixture. Once the oil is hot, start deep frying. Don’t put all 24 wings in one shot. Cooking in batches is highly recommended. Cook each side of the chicken. About 8-10 (or less) minutes each side. When cooked, drain the wings by putting them in a paper towel lined plate. Repeat the process until all wings are fried.
In a huge pot, pour the hot sauce in it. Depending how many chicken wings you’re making, 1/2 cup(+ a little bit more) is sufficient for 24 wings. Add the butter to melt, stirring a few times. Make sure the stove is in the lowest heat. Dump the fried wings in the hot sauce pan. Mix it all up to coat the wings evenly with the hot sauce, At this point turn off the stove.
Drenching the wings in flour is the secret. AND using the right hot sauce. Don’t use just regular “wings sauce”. Use Texas Pete coz they’re the best out there. We usually accompany hot wings with either celery sticks, cucumber or baby carrots. Sometimes we’d order pizza and then I’ll make my own wings to go with the pizza.
The kids of course don’t eat hot wings. Not yet anyway so I leave a few fried wings as is. No hot sauce coating. I can see my daughter getting into Hot Wings pretty soon though.
